Pepper Steak in a Crock Pot
Ingredients:
1 1/2 lbs beef sirloin, cut into thin strips
1 red bell pepper, sliced into strips
1 green bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 medium onion, sliced
3 garlic cloves, minced
1 can (14.5 oz) diced tomatoes with juice
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 cup water
1 tablespoon cornstarch
1/4 cup cold water
Cooked rice, for serving
Directions:
Prepare the Vegetables and Meat:
Slice the beef sirloin into thin strips and set aside.
Slice the red, green, and yellow bell peppers into strips, and slice the onion as well. Mince the garlic cloves.
Layer Ingredients in the Crock Pot:
Place the beef strips in the bottom of the crock pot.
Add the sliced peppers, onion, and minced garlic on top of the beef.
Add the Sauces and Seasoning:
Pour the diced tomatoes with their juice over the beef and vegetables.
Add the soy sauce, Worcestershire sauce, ground ginger, and black pepper.
Pour 1/4 cup of water into the crock pot.
Cook:
Cover the crock pot with the lid and cook on low for 6-7 hours, or on high for 3-4 hours, until the beef is tender and the flavors are well combined.
Thicken the Sauce:
In a small bowl, mix the cornstarch with 1/4 cup of cold water until smooth.
About 30 minutes before serving, stir the cornstarch mixture into the crock pot to thicken the sauce. Let it cook for the remaining 30 minutes.
Serve:
Serve the pepper steak hot over cooked rice.
