Peanut Butter Stuffed Cookies

Ingredients:
For the Cookie Dough:
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup packed brown sugar
1 cup creamy peanut butter
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
For the Peanut Butter Filling:
1 cup creamy peanut butter
1/4 cup powdered sugar

Directions:
Make the Filling: In a small bowl, mix together the creamy peanut butter and powdered sugar until smooth. Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Freeze for about 30 minutes to firm up.
Prepare the Cookie Dough: Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and peanut butter until smooth and creamy. Add the eggs, one at a time, mixing well after each addition, and then stir in the vanilla extract.
Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.
Assemble the Cookies: Take a tablespoon of cookie dough and flatten it in your palm. Place a peanut butter ball in the center, then wrap the cookie dough around the filling and roll it into a ball. Make sure the filling is completely encased in dough. Repeat with the remaining dough and filling.
Bake: Place the cookie balls on a baking sheet lined with parchment paper, leaving about 2 inches between each cookie. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will continue to cook as they cool.
Cool: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Serve: Enjoy your peanut butter stuffed cookies warm or at room temperature. They can be stored in an airtight container for up to a week.
