Peach Cobbler Cookies

Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup diced fresh peaches (or canned, drained)
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/2 cup chopped pecans (optional)
1/4 cup granulated sugar (for rolling)

Directions:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Gently fold in the diced peaches, cinnamon, nutmeg, and chopped pecans if using.
Roll the dough into 1-inch balls and then roll each ball in the additional granulated sugar.
Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
Flatten each ball slightly with the bottom of a glass or your hand.
Bake for 10-12 minutes, or until the edges are lightly golden.
Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
