Peach Burrata Salad
Ingredients:
3 ripe peaches, sliced
8 oz burrata cheese (2 balls)
4 cups arugula or mixed greens
1/4 cup fresh basil leaves
1/4 cup extra virgin olive oil
2 tablespoons balsamic glaze (or balsamic vinegar)
1/4 cup toasted pine nuts or walnuts (optional)
Salt and freshly ground black pepper, to taste
A drizzle of honey (optional, for added sweetness)
Instructions:
Prepare the Peaches:
Slice the peaches into thin wedges. If the peaches are very ripe, handle them gently to avoid bruising.
Assemble the Salad:
On a large platter or individual plates, arrange the arugula or mixed greens as the base.
Scatter the peach slices over the greens, then tear the burrata cheese into chunks and distribute it evenly over the salad.
Add Fresh Basil and Nuts:
Sprinkle the fresh basil leaves over the top. If using toasted pine nuts or walnuts, scatter them across the salad for added crunch.
Dress the Salad:
Drizzle the olive oil and balsamic glaze (or vinegar) over the entire salad.
Season with salt and freshly ground black pepper to taste.
Finishing Touch:
For an extra touch of sweetness, drizzle a little honey over the salad (optional).
Serve:
Serve immediately while the peaches are fresh and the burrata is soft and creamy.
