Parmesan Meatloaf
Ingredients:
1 ½ lbs ground beef (80/20 mix recommended)
1 cup grated Parmesan cheese
¾ cup breadcrumbs (preferably Italian-seasoned)
2 large eggs
½ cup milk
1 small onion, finely chopped
3 cloves garlic, minced
¼ cup fresh parsley, chopped (or 1 tablespoon dried parsley)
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
½ teaspoon black pepper
1 cup marinara sauce (divided)
1 cup shredded mozzarella cheese
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
Mix Ingredients:
In a large mixing bowl, combine the ground beef, grated Parmesan, breadcrumbs, eggs, milk, chopped onion, minced garlic, parsley, Worcestershire sauce, oregano, basil, salt, and pepper. Mix everything together until well combined, but avoid over-mixing to keep the meatloaf tender.
Form the Meatloaf:
On the prepared baking sheet, shape the mixture into a loaf about 8 inches long and 4 inches wide. If using a loaf pan, press the mixture into the pan evenly.
Add Marinara Sauce:
Spread ½ cup of marinara sauce over the top of the meatloaf, reserving the remaining ½ cup for later.
Bake:
Place the meatloaf in the preheated oven and bake for 45-50 minutes.
Add Cheese:
Remove the meatloaf from the oven. Spread the remaining marinara sauce over the top and sprinkle the shredded mozzarella cheese evenly.
Final Bake:
Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the internal temperature reaches 160°F (71°C).
Rest and Serve:
Allow the meatloaf to rest for about 10 minutes before slicing. Serve with your favorite side dishes.
Storage:
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat slices in the microwave or oven.
