Parmesan Meatloaf

Ingredients:
1 lb ground beef
1/2 lb ground pork
1 cup breadcrumbs (use gluten-free if needed)
1/2 cup grated Parmesan cheese
1/2 cup milk
1/4 cup onion, finely chopped
2 cloves garlic, minced
1 large egg
2 tablespoons fresh parsley, chopped (or 1 tablespoon dried parsley)
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup marinara sauce (optional, for topping)
1/2 cup shredded mozzarella cheese (optional, for topping)

Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
Soak Breadcrumbs:
In a large bowl, combine the breadcrumbs and milk. Let sit for 5 minutes to allow the breadcrumbs to absorb the milk.
Prepare Meat Mixture:
Add the ground beef, ground pork, Parmesan cheese, onion, garlic, egg, parsley, Italian seasoning, salt, and pepper to the breadcrumb mixture. Mix well until all ingredients are evenly combined.
Shape and Bake:
Transfer the meat mixture into the prepared loaf pan. Press it down firmly to remove any air pockets and shape it into a loaf.
Optional Topping:
Spread the marinara sauce over the top of the meatloaf, then sprinkle with shredded mozzarella cheese.
Bake:
Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F/70°C).
Rest:
Allow the meatloaf to rest for 10 minutes before slicing and serving.
