Parmesan Encrusted Shrimp with Baked Herb Potatoes
Ingredients:
1 pound large shrimp, peeled and deveined
1 cup grated Parmesan cheese
1 cup breadcrumbs
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
4 medium-sized potatoes, cut into wedges
2 tablespoons fresh parsley, chopped
Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a bowl, combine Parmesan cheese, breadcrumbs, garlic powder, oregano, paprika, salt, and pepper.
3. Dip each shrimp into olive oil, then coat it in the Parmesan mixture. Place coated shrimp on a baking sheet.
4. Toss the potato wedges with olive oil, salt, and pepper. Spread them evenly on another baking sheet.
5. Bake the shrimp and potatoes for 15–20 minutes, or until the shrimp are golden and crispy, and the potatoes are tender.
6. Garnish both shrimp and potatoes with chopped fresh parsley before serving.
