Parmesan Crusted Chicken

Ingredients:
4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1 cup breadcrumbs (plain or Italian)
1 teaspoon dried Italian seasoning
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1/4 cup all-purpose flour
2 tablespoons olive oil or melted butter

Directions:
Prepare the Chicken:
Preheat your oven to 400°F (200°C).
Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound them to an even thickness (about 1/2 inch thick). This helps them cook evenly.
Set Up Breading Stations:
In a shallow dish, combine the flour with a pinch of salt and pepper.
In another shallow dish, beat the eggs.
In a third shallow dish, mix together the Parmesan cheese, breadcrumbs, Italian seasoning, garlic powder, paprika, salt, and black pepper.
Bread the Chicken:
Dredge each chicken breast in the flour, shaking off the excess.
Dip it into the beaten eggs, allowing any excess to drip off.
Press the chicken into the Parmesan breadcrumb mixture, ensuring it’s well coated on both sides.
Cook the Chicken:
Heat the olive oil or melted butter in a large oven-safe skillet over medium-high heat.
Add the breaded chicken breasts and cook for 2-3 minutes per side, or until they are golden brown.
Bake:
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (74°C). The coating should be crispy and golden.
Serve:
Remove the chicken from the oven and let it rest for a few minutes before serving.
