Pan-Seared Mediterranean Cod in Tomato Basil Sauce
Ingredients:
– 4 cod fillets
– 2 tablespoons olive oil
– 1 onion, finely chopped
– 3 cloves garlic, minced
– 2 cups cherry tomatoes, halved
– 1 can (14.5 oz) diced tomatoes
– 1/2 cup fresh basil leaves, chopped
– 1/4 cup dry white wine
– Salt and pepper to taste
– Lemon wedges for serving
Directions:
1. Prepare the Cod:
– Season the cod fillets with salt and pepper.
2. Sear the Cod:
– Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
– Add the cod fillets and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
3. Prepare the Sauce:
– In the same skillet, add the remaining tablespoon of olive oil. Add the onion and garlic, and sauté for 2-3 minutes until softened.
– Add the cherry tomatoes and cook for another 3 minutes until they start to break down.
– Stir in the diced tomatoes, white wine, and half of the chopped basil. Simmer for 10 minutes to allow the flavors to meld together.
4. Combine and Serve:
– Return the cod fillets to the skillet and spoon the sauce over the top. Simmer for another 2-3 minutes to heat the fish through.
– Serve the cod fillets with the tomato basil sauce spooned over the top.
– Garnish with the remaining chopped basil and lemon wedges.
