One Pot Chicken Alfredo Recipe

Ingredients:
1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
1 tbsp olive oil
2 tbsp unsalted butter
3 cloves garlic, minced
4 cups chicken broth (or substitute with half water for a lighter taste)
1 1/2 cups heavy cream
12 oz (340g) fettuccine pasta (or your choice of pasta)
1 cup freshly grated Parmesan cheese
Fresh parsley, chopped (for garnish)

Instructions:
1. Cook the Chicken:
Season the chicken pieces with salt and pepper.
In a large pot or deep skillet, heat olive oil over medium-high heat.
Add chicken pieces and cook until golden brown on all sides, about 5-7 minutes.
Remove the chicken from the pot and set aside.
2. Sauté the Garlic:
In the same pot, add butter and let it melt.
Add minced garlic and sauté for about 1 minute until fragrant.
3. Add Broth, Cream, and Pasta:
Pour in the chicken broth and heavy cream, stirring to combine.
Add the pasta, making sure it’s fully submerged in the liquid.
Bring to a simmer, then reduce heat to medium-low.
Cover and cook, stirring occasionally, until the pasta is al dente, about 10-12 minutes.
4. Finish with Cheese and Chicken:
Once the pasta is cooked, stir in the Parmesan cheese until it melts and the sauce is creamy.
Add the cooked chicken back to the pot and stir to combine.
5. Serve:
Garnish with fresh parsley and extra Parmesan if desired.
Serve warm, with a side of garlic bread or a fresh green salad.
