One-Pan Bold Honey BBQ Chicken Rice
Ingredients:
1 lb boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
1 cup long-grain white rice (or brown rice for a healthier option)
2 cups chicken broth
1/4 cup honey
1/4 cup BBQ sauce (your favorite brand or homemade)
2 tablespoons olive oil
1 tablespoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper to taste
Fresh parsley or green onions (for garnish, optional)
Instructions:
Prep the Chicken:
In a bowl, toss the chicken pieces with smoked paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
Sear the Chicken:
Heat olive oil in a large skillet or deep pan over medium-high heat. Add the chicken pieces and sear until lightly browned (about 3–4 minutes per side). The chicken doesn’t need to be fully cooked through yet. Remove and set aside.
Add Rice & Broth:
In the same pan, stir in the rice and chicken broth. Scrape the bottom of the pan to loosen any flavorful bits.
Mix the Sauce:
In a small bowl, whisk together the honey and BBQ sauce. Stir half of this mixture into the rice and broth.
Simmer:
Return the seared chicken to the pan, nestling the pieces into the rice. Reduce heat to low, cover, and let simmer for about 20 minutes (25–30 mins for brown rice), or until the rice is tender and the liquid is mostly absorbed.
Glaze & Finish:
Once the rice is cooked, remove the lid and drizzle the remaining honey BBQ sauce over the top. Let cook uncovered for another 3–5 minutes to thicken slightly and let the chicken caramelize a bit.
Garnish & Serve:
Sprinkle with chopped parsley or green onions, and serve hot!
