🧾 Ingredients:
¾ cup shortening
¾ cup packed light brown sugar
1 large egg
½ cup molasses
2½ cups all-purpose flour
¼ tsp salt
2 tsp baking soda
1 tsp ground cinnamon
1 tsp ground ginger
½ tsp ground nutmeg
Granulated sugar, for rolling

Cream the base:
In a large bowl, cream together the shortening and brown sugar until light and fluffy. Add in the egg and molasses, mixing well.
Mix dry ingredients:
In a separate bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and nutmeg.
Combine:
Gradually add the dry ingredients to the wet ingredients until a soft dough forms. Chill the dough for 30 minutes for easier rolling.
Roll & coat:
Scoop dough into 1-inch balls and roll in granulated sugar to coat.
Bake:
Place cookies on a parchment-lined baking sheet and bake at 375°F (190°C) for 8–10 minutes, or until edges are set and centers are soft. Don’t overbake!
