Old-Fashioned Peanut Brittle

Ingredients:
2 cups granulated sugar
1 cup light corn syrup
1/4 cup water
2 cups roasted unsalted peanuts
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon baking soda
2 tablespoons unsalted butter
Directions:
Prepare baking sheet: Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Cook the sugar mixture: In a large saucepan over medium heat, combine the granulated sugar, corn syrup, and water. Stir until the sugar dissolves, then bring to a boil without stirring.
Add peanuts: Once the mixture reaches a boil, add the roasted peanuts and salt. Continue to cook, stirring frequently, until the mixture reaches a deep golden color (approximately 300°F or 149°C on a candy thermometer).
Remove from heat: Remove the saucepan from the heat and quickly stir in the vanilla extract, baking soda, and butter. The mixture will bubble up.
Pour onto baking sheet: Immediately pour the peanut mixture onto the prepared baking sheet, spreading it out evenly with a spatula.
Cool completely: Allow the peanut brittle to cool completely at room temperature until it hardens, about 1-2 hours.
Break into pieces: Once cooled, break the brittle into pieces and store in an airtight container.
