Old Fashioned Pancakes

Ingredients:
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 tablespoon sugar
¼ teaspoon salt
1 ¼ cups milk
1 egg
3 tablespoons butter, melted
1 teaspoon vanilla extract (optional)
Butter or oil for cooking

Directions:
Prepare the Dry Ingredients:
In a large mixing bowl, sift together the flour, baking powder, sugar, and salt. Make sure all the dry ingredients are well combined.
Mix the Wet Ingredients:
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using). Make sure the egg is fully incorporated into the mixture.
Combine Wet and Dry Ingredients:
Pour the wet ingredients into the bowl with the dry ingredients. Gently stir until just combined; it’s okay if there are a few lumps. Be careful not to overmix, as this can make the pancakes tough.
Heat the Pan:
Preheat a griddle or large skillet over medium heat. Lightly grease the pan with butter or oil.
Cook the Pancakes:
Pour about ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes. Flip the pancake and cook for another 1-2 minutes, or until golden brown and cooked through.
Serve:
Serve the pancakes warm with butter, maple syrup, or your favorite toppings.
