Old Fashioned Fudge

Ingredients:
3 cups granulated sugar
3/4 cup unsalted butter
2/3 cup evaporated milk
2 cups semisweet chocolate chips
7 oz jar marshmallow cream (or fluff)
1 teaspoon vanilla extract
1/4 teaspoon salt
Optional: 1 cup chopped nuts (walnuts or pecans)

Directions:
Prepare Pan:
Line an 8×8-inch square baking dish with parchment paper or lightly grease with butter.
Melt Butter and Sugar:
In a medium saucepan, combine the sugar, butter, and evaporated milk. Cook over medium heat, stirring constantly until the mixture begins to boil.
Boil the Mixture:
Once boiling, continue to cook while stirring for about 4-5 minutes. The mixture should reach a soft-ball stage, which is about 234°F (112°C) on a candy thermometer.
Remove from Heat:
Remove the saucepan from the heat. Stir in the chocolate chips until melted and smooth.
Add Marshmallow Cream:
Add the marshmallow cream, vanilla extract, and salt to the mixture. Stir vigorously until everything is well combined. If using nuts, fold them in at this stage.
Pour into Pan:
Quickly pour the fudge mixture into the prepared baking dish, spreading it evenly.
Cool and Set:
Let the fudge cool at room temperature for 2-3 hours, or until fully set. For quicker setting, you can place the dish in the refrigerator for about an hour.
Cut and Serve:
Once set, cut the fudge into small squares and serve. Store any leftovers in an airtight container at room temperature or in the fridge.
