Old-Fashioned Cherry Cobbler

🍒 Old-Fashioned Cherry Cobbler
It’s old-fashioned, but it hits like new love.

🧂 Ingredients
For the Filling:
4 cups fresh or frozen pitted cherries

½ cup granulated sugar

1 tbsp lemon juice

2 tbsp cornstarch

For the Cobbler Topping:
1 cup all-purpose flour

1 cup granulated sugar

1 ½ tsp baking powder

½ tsp salt

½ cup (1 stick) unsalted butter, melted and slightly cooled

1 large egg

1 tsp vanilla extract

👩‍🍳 How to Make It
1. Prepare the Cherry Filling
In a large bowl, toss cherries with sugar, lemon juice, and cornstarch until evenly coated.

Set aside to macerate for 10–15 minutes.

2. Preheat Oven
Preheat your oven to 350°F (175°C).

Grease a 9×9-inch baking dish or similar size.

3. Make the Cobbler Batter
In a medium bowl, whisk together flour, sugar, baking powder, and salt.

Stir in the melted butter, egg, and vanilla extract until smooth and combined.

4. Assemble the Cobbler
Pour the cherry filling into the prepared baking dish.

Spoon the batter over the cherries evenly. It’s okay if the batter doesn’t cover the fruit entirely — it will spread as it bakes.

5. Bake
Bake for 45–50 minutes, or until the topping is golden brown and cooked through, and the cherry filling is bubbly.

6. Cool & Serve
Let the cobbler cool slightly before serving.

Serve warm with vanilla ice cream or whipped cream for the perfect finish.

🍨 Tips
If using frozen cherries, no need to thaw—just add a few extra minutes to baking time.

For an extra crunch, sprinkle coarse sugar over the top before baking.

Feel free to swap some cherries for berries or stone fruit for variation.
