Okra Patties
Ingredients:
2 cups fresh okra, finely chopped
1/2 cup onion, finely chopped
1/2 cup bell pepper, finely chopped (any color)
2 cloves garlic, minced
1/2 cup all-purpose flour
1/2 cup cornmeal
1 large egg
1/2 cup shredded cheddar cheese (optional)
1/4 cup fresh parsley, chopped
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional, for a bit of heat)
Salt and black pepper to taste
Vegetable oil for frying
Directions:
Prepare the Okra:
Wash and trim the okra. Finely chop the okra into small pieces.
Place the chopped okra in a colander and let it drain for about 10 minutes to remove excess moisture. Pat dry with a paper towel.
Mix Ingredients:
In a large mixing bowl, combine the chopped okra, onion, bell pepper, garlic, and parsley.
Stir in the flour, cornmeal, paprika, cumin, cayenne pepper (if using), salt, and black pepper.
Beat the egg and add it to the mixture, stirring until everything is well combined. If using cheese, fold it in at this stage.
Form Patties:
Shape the mixture into small patties, about 2-3 inches in diameter. You should get around 12-15 patties, depending on size.
Fry the Patties:
Heat a generous amount of vegetable oil in a large skillet over medium heat.
Once the oil is hot, carefully place the patties in the skillet. Don’t overcrowd; work in batches if necessary.
Cook each patty for about 3-4 minutes per side, or until golden brown and crispy.
Transfer the cooked patties to a plate lined with paper towels to drain excess oil.
Serve:
Serve the okra patties warm as an appetizer or side dish. They pair well with a dipping sauce, such as ranch or a spicy aioli.
