Oatmeal Scotchies Cookies
Ingredients:
1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 cups old-fashioned oats
1 2/3 cups butterscotch chips
Directions:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this mixture to the wet ingredients, mixing until combined.
Stir in the oats and butterscotch chips until evenly distributed throughout the dough.
Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
Bake for 10-12 minutes, or until the edges are golden brown and the centers are set. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
