Oatmeal, Apple, and Carrot Bake (Sugar-Free & Flour-Free)
Ingredients:
2 cups (200 g) rolled oats, chopped in a blender
1 teaspoon baking powder
1 cup (240 ml) milk of your choice (e.g., almond, oat, or dairy milk)
1 carrot, grated
9 dried apricots, rinsed with hot water and chopped
4 tablespoons raisins, rinsed with hot water
1 apple, grated
1 teaspoon cinnamon
3 eggs
Instructions:
Preheat your oven to 350°F (175°C) and grease a baking dish (approximately 8×8 inches or similar size) or line it with parchment paper.
Prepare the oats: If you haven’t already, blend the rolled oats in a blender or food processor until they become a finer texture, almost like oat flour.
Mix dry ingredients: In a large bowl, combine the chopped oats with the baking powder and cinnamon. Stir well to evenly distribute the baking powder and cinnamon.
Prepare the wet ingredients: In another bowl, whisk together the milk and eggs. Add the grated carrot, grated apple, dried apricots, raisins, and any other desired flavoring (e.g., vanilla extract). Mix everything until well combined.
Combine wet and dry ingredients: Gradually add the wet mixture to the dry ingredients. Stir until everything is well mixed.
Pour into the baking dish: Transfer the mixture to the prepared baking dish, spreading it out evenly.
Bake: Place the dish in the oven and bake for 40-45 minutes or until the top is golden brown and the texture is set (you can test it with a toothpick – it should come out clean).
Cool and serve: Allow the baked dish to cool for about 10-15 minutes before slicing and serving. You can enjoy it warm or at room temperature.
Tips:
You can store leftovers in an airtight container for up to 3-4 days. It also freezes well if you want to keep it for longer.
