No Boil Slow Cooker Mashed Potatoes
Ingredients:
4 pounds Yukon Gold or Russet potatoes, peeled and cut into chunks
1/2 cup unsalted butter, cubed
1 cup chicken broth (or vegetable broth)
1/2 cup milk (whole or 2%)
1/2 cup sour cream
2-3 cloves garlic, minced (optional)
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions:
Prepare Potatoes:
Peel and cut the potatoes into chunks. Place them in the slow cooker.
Add Ingredients:
Add the cubed butter and minced garlic (if using) to the slow cooker. Pour the chicken broth over the potatoes.
Cook:
Cover and cook on low for 7-8 hours, or until the potatoes are very tender and easily pierced with a fork. Alternatively, you can cook on high for 4-5 hours.
Mash Potatoes:
Once the potatoes are tender, use a potato masher to mash them directly in the slow cooker. For smoother potatoes, you can use an electric mixer.
Add Dairy:
Stir in the milk and sour cream. Mix until well combined and the potatoes reach your desired consistency. Season with salt and pepper to taste.
Garnish and Serve:
Garnish with chopped fresh parsley if desired. Serve warm.
