Ingredients:
24 Funfetti Oreos (or regular Oreos, if preferred)
2 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 package (8 oz) cream cheese, softened
1 cup Funfetti cake mix (dry)
1/2 cup whole milk
1/2 cup rainbow sprinkles (for topping)
1 cup mini marshmallows (optional)
Directions:
Prepare the Whipped Cream:
In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside in the refrigerator while preparing the rest of the cake.
Make the Funfetti Cream Layer:
In another bowl, beat the softened cream cheese until smooth.
Slowly mix in the dry Funfetti cake mix and milk until the mixture is thick and creamy.
Gently fold in half of the whipped cream mixture until well combined.
Assemble the Cake:
In an 8×8-inch baking dish, spread a thin layer of the Funfetti cream mixture on the bottom.
Arrange a layer of Funfetti Oreos (or regular Oreos) on top of the cream. You may need to break some Oreos to fill in the edges.
Spread another layer of Funfetti cream on top of the Oreos.
Repeat the layers, finishing with a layer of Funfetti cream on top. You should have 2-3 layers, depending on the depth of your dish.
Add Toppings:
Sprinkle the top layer with rainbow sprinkles and mini marshmallows (if using).
Cover the cake with plastic wrap and refrigerate for at least 4 hours, or overnight for the best results.
Serve:
Slice the icebox cake and serve chilled. You can also garnish with additional sprinkles or a drizzle of chocolate sauce if desired.
