Mozzarella-Stuffed Onion Rings with Garlic Butter
Ingredients:
2 large white onions
1 cup shredded mozzarella cheese
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup butter
Salt and pepper, to taste
Oil for frying
Instructions:
1. Peel the onions and slice them into 1/2-inch thick rings. Separate into pairs of similar-sized rings to form hollow centers for stuffing.
2. Press shredded mozzarella between two matching onion rings to form a cheese-filled ring. Gently press the rings together to seal.
3. Prepare three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with a mixture of breadcrumbs and Parmesan.
4. Coat each stuffed onion ring first in flour, then dip in egg, and finally coat with the breadcrumb-Parmesan mixture. Press gently to ensure full coverage.
5. Place the breaded onion rings on a baking tray and refrigerate for 20 minutes to help them firm up before frying.
6. Heat oil in a deep pot or fryer to 350°F (175°C). Fry 2–3 rings at a time for 2–3 minutes or until golden brown. Transfer to a plate lined with paper towels.
7. While the rings drain, melt the butter in a small saucepan over medium heat. Add minced garlic and cook for about 1 minute until fragrant, not browned.
8. Drizzle warm garlic butter over the crispy onion rings and serve immediately.
