Mounds Brownies

Mounds Brownies

Ingredients:
For the Brownie Base:
1/2 cup (1 stick) unsalted butter
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
1/4 teaspoon baking powder
For the Coconut Filling:
1 cup sweetened shredded coconut
1/2 cup sweetened condensed milk
For the Chocolate Topping:
1 cup semi-sweet chocolate chips
1 tablespoon unsalted butter

Directions:
Prepare the Brownie Base:
Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan or line it with parchment paper.
In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla extract until well combined.
In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
Gradually stir the dry ingredients into the butter mixture until just combined.
Spread the brownie batter evenly in the prepared baking pan.
Prepare the Coconut Filling:
In a medium bowl, mix the shredded coconut and sweetened condensed milk until well combined.
Drop spoonfuls of the coconut mixture over the brownie batter and gently spread it out, leaving some of the brownie batter visible around the edges.
Bake the Brownies:
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay). The coconut layer will appear set.
Allow the brownies to cool completely in the pan on a wire rack.
Prepare the Chocolate Topping:
In a microwave-safe bowl, melt the chocolate chips and butter together in 30-second intervals, stirring after each interval, until smooth and fully melted.
Spread the melted chocolate evenly over the cooled brownies.
Serve:
Allow the chocolate topping to set before cutting into squares.
For best results, chill the brownies in the refrigerator for about 30 minutes to help the chocolate set.
