Monterey Chicken Bubble Up
Ingredients:
2 cups cooked, shredded chicken (about 2 medium chicken breasts)
1 can (12 oz) refrigerated biscuit dough (like Pillsbury Grands)
1 cup BBQ sauce
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1/2 cup cooked bacon bits (optional)
1/4 cup sliced green onions (optional)
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
Directions:
Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Prepare the Biscuit Dough: Open the can of biscuit dough, and cut each biscuit into quarters. Set aside.
Mix Chicken and BBQ Sauce: In a bowl, combine the shredded chicken with the BBQ sauce, garlic powder, onion powder, salt, and pepper. Stir well to coat the chicken evenly.
Assemble the Dish: Layer the bottom of the greased baking dish with the quartered biscuit pieces. Pour the BBQ chicken mixture over the biscuits, spreading it evenly.
Top with Cheese and Bacon: Sprinkle the shredded Monterey Jack cheese and cheddar cheese evenly over the chicken. If using, sprinkle bacon bits on top as well.
Bake: Place the dish in the oven and bake for 30-35 minutes, or until the biscuits are golden brown and cooked through, and the cheese is melted and bubbly.
Garnish and Serve: Once out of the oven, top with sliced green onions if desired. Serve hot and enjoy!
