Mongolian Ground Beef Noodles Recipe

Ingredients:
8 oz spaghetti or fettuccine noodles
1 lb ground beef
1 tbsp vegetable oil
4 cloves garlic, minced
1 tbsp fresh ginger, minced
1/2 cup low-sodium soy sauce
1/4 cup beef broth (or water)
1/4 cup brown sugar
1 tbsp hoisin sauce (optional, for extra depth)
1/2 tsp red pepper flakes (optional, for a hint of spice)
1/2 cup green onions, sliced (plus extra for garnish)
1 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)
Salt and pepper, to taste
Sesame seeds (optional, for garnish)

Instructions:
Cook the Noodles:
Boil the noodles according to the package instructions until al dente. Drain, rinse under cold water, and set aside.
Cook the Ground Beef:
In a large skillet or wok over medium-high heat, add the vegetable oil. Add the ground beef, breaking it up as it cooks until it’s browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
Add Aromatics:
Add the minced garlic and ginger to the skillet with the beef, and cook for another 1-2 minutes until fragrant.
Make the Sauce:
Pour in the soy sauce, beef broth, brown sugar, hoisin sauce (if using), and red pepper flakes. Stir well to combine. Simmer for 2-3 minutes to allow the flavors to meld.
Thicken the Sauce:
Stir in the cornstarch slurry and cook for an additional 1-2 minutes, until the sauce thickens slightly.
Combine Noodles and Sauce:
Add the cooked noodles to the skillet, tossing well to coat the noodles in the sauce. Stir in the green onions, and adjust seasoning with salt and pepper if needed.
Serve:
Divide into bowls, garnish with extra green onions and sesame seeds if desired, and enjoy!
