Ingredients:
1 pound ground beef
8 ounces noodles (spaghetti, linguine, or rice noodles)
1/2 cup low-sodium soy sauce
1/4 cup brown sugar
1/4 cup beef broth or water
2 tablespoons hoisin sauce
2 tablespoons sesame oil (divided)
4 cloves garlic (minced)
1-inch piece of fresh ginger (grated, or 1 teaspoon ground ginger)
1/4 teaspoon red pepper flakes (optional)
1/2 cup green onions (sliced, plus extra for garnish)
1/2 cup carrots (julienned or thinly sliced)
1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening sauce)
Sesame seeds (for garnish)

Instructions:
Cook the noodles:
Cook the noodles according to package instructions until al dente. Drain and set aside.
Cook the ground beef:
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if needed.
Make the sauce:
In a bowl, whisk together the soy sauce, brown sugar, beef broth, and hoisin sauce.
Sauté the aromatics:
Push the cooked beef to one side of the skillet and add the remaining 1 tablespoon of sesame oil. Add the garlic, ginger, and red pepper flakes (if using) and sauté for about 30 seconds until fragrant.
Combine the sauce and beef:
Pour the prepared sauce into the skillet with the beef and stir well. If you want a thicker sauce, add the cornstarch mixture at this point and stir until the sauce thickens.
Add the vegetables and noodles:
Stir in the carrots and green onions, then add the cooked noodles. Toss everything together until the noodles are well coated with the sauce and heated through.
Serve:
Garnish with extra green onions and sesame seeds. Serve immediately and enjoy!
