Mongolian Ground Beef Noodles
Ingredients:
1 lb ground beef
8 oz noodles (spaghetti or ramen works well)
2 tbsp vegetable oil
1 small onion, finely chopped
3 cloves garlic, minced
1 tbsp fresh ginger, minced
1/2 cup soy sauce
1/4 cup hoisin sauce
1/4 cup brown sugar
1 tbsp rice vinegar
1/2 tsp sesame oil
1/2 tsp red pepper flakes (optional, for heat)
1 cup green onions, sliced
1/2 cup shredded carrots
1/2 cup bell pepper, sliced (red or green)
1 tbsp cornstarch mixed with 2 tbsp water (slurry)
Sesame seeds for garnish (optional)
Directions:
Cook the Noodles:
Cook the noodles according to package instructions until al dente. Drain and set aside.
Brown the Beef:
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the ground beef and cook until browned, breaking it up into small pieces with a spatula. Drain excess fat if necessary.
Sauté Aromatics:
Add the chopped onion, minced garlic, and minced ginger to the skillet with the beef. Cook for 2-3 minutes, or until the onion is translucent and the garlic and ginger are fragrant.
Prepare Sauce:
In a small bowl, mix together soy sauce, hoisin sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes if using.
Combine Ingredients:
Pour the sauce over the cooked beef and mix well.
Add the sliced green onions, shredded carrots, and bell pepper. Stir to combine and cook for another 2-3 minutes, or until the vegetables are tender-crisp.
Thicken Sauce:
Stir in the cornstarch slurry and cook for an additional 1-2 minutes, or until the sauce has thickened.
Add Noodles:
Add the cooked noodles to the skillet and toss everything together until the noodles are well coated with the sauce.
Garnish and Serve:
Garnish with sesame seeds if desired. Serve hot.
