Ingredients:

For the Cake:
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1/2 cup whole milk
1/4 cup strong brewed coffee
1/2 cup vegetable oil
1 teaspoon vanilla extract

For the Mocha Mousse:
1 cup heavy whipping cream
4 oz dark chocolate, melted
2 tablespoons instant coffee granules
1/4 cup powdered sugar

Directions:

Prepare the Cake:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
Mix Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add Wet Ingredients: Add eggs, milk, coffee, vegetable oil, and vanilla extract. Mix until well combined and smooth.
Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool completely before adding the mousse topping.

Prepare the Mocha Mousse:
Whip Cream: In a mixing bowl, beat the heavy whipping cream until soft peaks form.
Fold in the melted dark chocolate, instant coffee granules, and powdered sugar. Continue to mix until well combined and fluffy.

Assemble the Cake:
Once the cake has fully cooled, evenly spread the mocha mousse over the top and decorate with whipped cream, blueberries if desired.
For a firmer texture, refrigerate for 30 minutes before serving.
