Mini Meatloaf Muffins with Mashed Potato Frosting
Ingredients:
For the Meatloaf Muffins:
1 lb ground beef (or ground turkey)
1/2 cup breadcrumbs
1/2 cup onion, finely diced
1/4 cup milk
1 egg
2 cloves garlic, minced
1/2 cup shredded cheddar cheese
1/4 cup ketchup
1 tbsp Worcestershire sauce
1/2 tsp salt
1/4 tsp black pepper
For the Mashed Potato Frosting:
2 cups mashed potatoes (use leftover or freshly made)
1/4 cup sour cream
1/4 cup shredded cheddar cheese (optional, for extra flavor)
Salt and pepper, to taste
Fresh chives or parsley, chopped, for garnish
Instructions:
Preheat Oven:
Preheat your oven to 400°F (200°C). Grease a muffin tin or line with silicone muffin cups.
Make the Meatloaf Mixture:
In a large bowl, combine the ground beef, breadcrumbs, diced onion, milk, egg, minced garlic, shredded cheddar cheese, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined but don’t overwork the meat.
Form the Meatloaf Muffins:
Divide the meat mixture evenly into the muffin tin, pressing each portion down slightly. Each muffin cup should be filled nearly to the top.
Bake:
Bake for 20-25 minutes, or until the meatloaf muffins are cooked through and have an internal temperature of 160°F (71°C). Remove from the oven and allow them to cool slightly in the tin.
Prepare the Mashed Potato Frosting:
If not already made, prepare mashed potatoes by mashing cooked potatoes with sour cream, cheddar cheese, salt, and pepper until smooth and creamy.
Frost the Meatloaf Muffins:
Transfer the mashed potatoes to a piping bag or use a spoon to top each meatloaf muffin with a swirl of mashed potato “frosting.”
Garnish and Serve:
Garnish with fresh chives or parsley and serve warm.
