Mini Meatloaf Muffins with Mashed Potato Frosting
Ingredients:
For the Meatloaf Muffins:
1 lb ground beef (or turkey)
1/2 cup breadcrumbs
1/2 cup onion, finely chopped
1/2 cup bell pepper, finely chopped
1/4 cup ketchup (plus extra for topping)
1 egg
1 tsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
For the Mashed Potato Frosting:
2 cups mashed potatoes (prepared and cooled)
1/4 cup milk (or as needed)
2 tbsp butter
Salt and pepper to taste
Directions:
Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin.
Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, breadcrumbs, chopped onion, chopped bell pepper, ketchup, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until just combined.
Shape the Muffins: Divide the meat mixture evenly among the muffin cups, pressing it down gently. Top each meatloaf muffin with a small dollop of ketchup.
Bake the Muffins: Bake in the preheated oven for 20-25 minutes, or until the meatloaf muffins are cooked through and reach an internal temperature of 160°F (70°C).
Prepare the Mashed Potato Frosting: While the muffins are baking, prepare the mashed potato frosting. In a bowl, combine the cooled mashed potatoes, milk, butter, salt, and pepper. Mix until smooth and creamy. Adjust the milk as needed to achieve a piping consistency.
Frost the Muffins: Once the meatloaf muffins are done baking, let them cool slightly. Use a piping bag or a spoon to frost the tops with the mashed potatoes, creating a decorative swirl.
