Mini Meatloaf Muffins with Mashed Potato
Ingredients:
For the Meatloaf Muffins:
1 pound ground beef (or a mix of beef and pork)
1/2 cup breadcrumbs
1/2 cup finely chopped onion
1/4 cup ketchup
1/4 cup milk
1 egg
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon Worcestershire sauce
Salt and pepper to taste
For the Mashed Potatoes:
4 large potatoes, peeled and cubed
1/2 cup milk
1/4 cup butter
Salt and pepper to taste
1/4 cup sour cream (optional, for extra creaminess)
Chopped fresh parsley (for garnish, optional)
Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
Prepare the Meatloaf Muffins:
In a large bowl, combine the ground beef, breadcrumbs, chopped onion, ketchup, milk, egg, minced garlic, oregano, thyme, Worcestershire sauce, salt, and pepper. Mix until just combined; avoid overmixing.
Divide the meat mixture evenly among the muffin tin cups, pressing it down lightly.
Bake the Meatloaf Muffins:
Bake in the preheated oven for 20-25 minutes, or until the internal temperature of the meatloaf muffins reaches 160°F (71°C). Remove from the oven and let cool slightly.
Prepare the Mashed Potatoes:
While the meatloaf muffins are baking, place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until potatoes are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth. For extra creaminess, mix in sour cream.
Assemble:
Spoon a dollop of mashed potatoes on top of each meatloaf muffin. For a decorative touch, you can use a fork to create a swirl or pattern on the mashed potatoes.
Optional Garnish:
Garnish with chopped fresh parsley if desired.
