Ingredients:
3 cups cooked chicken, shredded or diced (rotisserie chicken works well)
8 oz (225g) cream cheese, softened
1 cup sour cream
1 can (10.5 oz) cream of chicken soup (or homemade)
1/2 cup mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
1 cup shredded cheddar cheese (plus extra for topping)
1 cup crushed Ritz crackers (or any buttery crackers)
1/4 cup unsalted butter, melted
1/4 cup chopped green onions (optional for garnish)

Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Prepare the Chicken Mixture:
In a large mixing bowl, combine the softened cream cheese, sour cream, cream of chicken soup, mayonnaise, garlic powder, onion powder, paprika, salt, and pepper. Mix until smooth and well combined.
Stir in the cooked chicken and 1 cup of shredded cheddar cheese until evenly distributed.
Assemble the Casserole:
Pour the chicken mixture into the prepared baking dish, spreading it evenly.
Prepare the Topping:
In a small bowl, mix the crushed Ritz crackers with the melted butter and a little extra shredded cheddar cheese (if desired) until well combined.
Sprinkle the cracker mixture evenly over the chicken casserole.
Bake:
Bake in the preheated oven for 30-35 minutes, or until the casserole is hot and bubbly, and the topping is golden brown.
Serve:
Let the casserole cool for a few minutes before serving. Garnish with chopped green onions if desired. Enjoy!
