For the Base:
200g digestive biscuits, crushed
100g butter, melted
For the Filling:
500g cream cheese, softened
1 cup sugar
1 tsp vanilla extract
4 eggs
1 cup milk
2 tbsp cornstarch

Ground cinnamon, for dusting

Prepare the Base:
Mix crushed digestive biscuits with melted butter until well combined.
Press the mixture firmly into the bottom of a greased or parchment-lined 9-inch springform pan.
Chill in the fridge while you prepare the filling.
Make the Filling:
In a large bowl, beat the cream cheese and sugar until smooth and creamy.
Add vanilla extract, then beat in the eggs one at a time, mixing well after each addition.
In a separate bowl, whisk together the milk and cornstarch until smooth. Slowly add to the cream cheese mixture and mix until fully combined.
Bake the Cheesecake:
Pour the filling over the prepared crust.
Bake at 160°C (320°F) for 45–55 minutes, or until the center is just set (a slight jiggle is okay).
Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour to prevent cracking.
Chill & Finish:
Refrigerate for at least 4 hours, preferably overnight.
