Microwave Chicken Teriyaki Recipe

Microwave Chicken Teriyaki Recipe

Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
1/4 cup soy sauce
2 tbsp honey
1 tbsp rice vinegar
1 tbsp sesame oil
1 garlic clove, minced
1 tsp grated fresh ginger (or 1/2 tsp ground ginger)
1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
1 green onion, sliced (for garnish)
Sesame seeds (for garnish)
Cooked rice (for serving)

Instructions:
Prepare Sauce: In a microwave-safe bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
Add Chicken: Add the chicken pieces to the bowl and stir to coat them evenly with the sauce.
Microwave Chicken: Cover the bowl with a microwave-safe lid or plastic wrap, leaving a small vent for steam to escape. Microwave on high for 4-6 minutes, stirring halfway through, until the chicken is cooked through and no longer pink in the center.
Thicken Sauce (Optional): If you prefer a thicker sauce, stir the cornstarch and water mixture into the chicken and sauce. Microwave for an additional 1-2 minutes until the sauce has thickened.
Serve: Garnish with sliced green onions and sesame seeds. Serve over cooked rice.
