🌮 Mexican White Trash Casserole
A rich, flavor-packed casserole loaded with ground beef, beans, corn, tomatoes, and cream cheese — all baked into one irresistibly creamy dish.
🧾 Ingredients:
1 lb ground beef
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies (like Rotel)
1 package (8 oz) cream cheese, softened
1 tsp taco seasoning (or to taste)
1½ cups shredded cheddar cheese
2 cups crushed tortilla chips or Fritos, divided
Optional: chopped green onions or fresh cilantro for garnish
👩🍳 Instructions:
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
Stir in the black beans, corn, diced tomatoes, and taco seasoning. Simmer for 5 minutes.
Add the cream cheese, stirring until melted and fully combined. Turn off heat.
Stir in 1 cup of crushed tortilla chips (this adds texture and keeps things hearty).
Transfer mixture to the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
Top with the remaining 1 cup of crushed chips.
Bake uncovered for 20–25 minutes, or until hot and bubbly and the cheese is melted.
Garnish with green onions or cilantro, if desired.
