½ tablespoon dried oregano
½ teaspoon chili powder
2 cups frozen sweet white corn
½ cup fresh cilantro, chopped

👩🍳 Instructions
Cook the Chicken:
In a large pot or Dutch oven, add chicken breasts, chopped onion, jalapeño, and chicken bone broth.
Bring to a simmer over medium heat and cook for about 20 minutes, or until chicken is fully cooked.
Shred the Chicken:
Remove chicken from the pot and shred using two forks.
Return shredded chicken to the pot.
Add Flavor:
Stir in garlic, oregano, chili powder, corn, sour cream, and shredded cheese.
Simmer over low heat for 10–15 minutes, stirring occasionally until the chili thickens slightly and the cheese melts smoothly.
Finish It Off:
Stir in the fresh cilantro.
Taste and adjust salt and pepper as needed.
Serve & Garnish:
Ladle into bowls and top with extra cheese, avocado, a squeeze of lime, or crunchy tortilla strips.
🌟 Tips:
Want it thicker? Mash a bit of the corn or stir in a few tablespoons of cream cheese.
This chili is even better the next day—hello, leftovers!
