Mexican Pizza

Ingredients:
For the base:
1 lb ground beef (or ground turkey)
1 packet taco seasoning (or homemade seasoning)
8 small flour tortillas
1 can (16 oz) refried beans
1 cup salsa (or enchilada sauce)
For the toppings:
1 1/2 cups shredded Mexican blend cheese
1/2 cup diced tomatoes
1/4 cup sliced black olives
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro (optional)

Instructions:
Cook the ground beef:
In a skillet over medium heat, cook the ground beef until browned and fully cooked. Drain any excess grease.
Add the taco seasoning and a splash of water (per the seasoning packet instructions). Stir to coat and simmer for a few minutes. Set aside.
Prepare the tortillas:
Preheat the oven to 400°F (200°C).
Lightly brush the tortillas with oil and bake them on a baking sheet for 3–5 minutes per side until crispy. Alternatively, fry them in a skillet over medium heat until golden and crisp.
Assemble the pizzas:
On a baking sheet, lay one crispy tortilla for each pizza base. Spread a thin layer of refried beans on top, followed by a layer of seasoned ground beef.
Place another tortilla on top of the meat layer.
Add the toppings:
Spread salsa or enchilada sauce over the top tortilla. Sprinkle with shredded cheese, diced tomatoes, black olives, and green onions.
Bake:
Bake in the preheated oven for 8–10 minutes, or until the cheese is melted and bubbly.
Serve:
Remove from the oven, garnish with fresh cilantro if desired, and cut into quarters or halves. Serve with sour cream, guacamole, or hot sauce on the side.
