Mexican Pizza

Mexican Pizza

Ingredients:
1 lb ground beef
1 packet taco seasoning
1 (16 oz) can refried beans
4 large flour tortillas
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup diced tomatoes
1/4 cup sliced black olives
1/4 cup sliced green onions
1/2 cup salsa
Sour cream (optional)

Directions:
Prepare Ground Beef: In a skillet, cook the ground beef over medium heat until browned, about 7-8 minutes. Drain any excess fat and stir in taco seasoning according to the packet instructions. Set aside.
Preheat Oven: Preheat the oven to 400°F (200°C).
Assemble Pizza Base: Lay one flour tortilla on a baking sheet. Spread half of the refried beans evenly across the tortilla. Then spread half of the cooked beef mixture over the beans. Top with a second tortilla to create the pizza base.
Add Toppings: Spread half of the salsa over the top tortilla, then sprinkle half of the cheddar and Monterey Jack cheeses over the salsa. Add diced tomatoes, black olives, and green onions as toppings.
Bake Pizza: Place the Mexican pizza in the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
Repeat: Assemble the second pizza with the remaining ingredients and bake it in the same manner.
Serve: Slice the Mexican pizzas into wedges and top with sour cream if desired.
