Mexican Casserole

Ingredients:
1 pound ground beef (or ground turkey)
1 small onion, chopped
2 cloves garlic, minced
1 (1 oz) packet taco seasoning
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained
1 (10 oz) can diced tomatoes with green chilies, undrained (such as Rotel)
1 cup salsa
8 small flour or corn tortillas, cut into strips
2 cups shredded Mexican blend cheese
Optional toppings: sour cream, chopped cilantro, sliced jalapeños, diced avocado, or chopped green onions

Instructions:
Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Cook the beef: In a large skillet over medium-high heat, cook the ground beef with the chopped onion until the beef is browned and the onion is soft. Drain any excess fat. Add the minced garlic and taco seasoning, cooking for another minute.
Add the vegetables: Stir in the black beans, corn, diced tomatoes with green chilies, and salsa. Cook for 2-3 minutes until everything is well combined and heated through.
Assemble the casserole:
Spread a thin layer of the meat mixture on the bottom of the prepared baking dish.
Layer half of the tortilla strips over the meat mixture.
Sprinkle with half of the shredded cheese.
Repeat the layers with the remaining meat mixture, tortilla strips, and cheese.
Bake: Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly browned.
Add optional toppings and serve: Let the casserole cool for a few minutes, then add any desired toppings like sour cream, cilantro, or avocado.
