Ingredients:
- 1 lb lean ground beef
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 can refrigerated biscuit dough (10–12 count, e.g., Pillsbury Grands! Flaky Layers or similar)
- 1½ cups shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 tbsp unsalted butter, melted
- 1 tbsp fresh chopped parsley (for garnish, optional)
- Optional “Big Mac Sauce” for serving: ⅓ cup mayonnaise, 2 tbsp ketchup, 1 tbsp sweet relish, 1 tsp yellow mustard, ½ tsp onion powder, ½ tsp garlic powder, ½ tsp paprika.
Equipment:
- Large skillet
- Spatula or wooden spoon
- Cutting board
- Small bowl (for melted butter)
- Baking sheet
- Parchment paper or silicone baking mat
Instructions:
-
Preheat Oven & Prep Biscuits: Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper. Open the can of refrigerated biscuit dough. If using the larger “Grands!” style biscuits, cut each biscuit in half or quarters depending on desired bomb size; for smaller (10-12 count) biscuits, you can use them whole, flattening slightly.
-
Cook Ground Beef: In a large skillet, cook the lean ground beef over medium-high heat, breaking it up with a spatula, until thoroughly browned. Drain off any excess grease.
-
Season Beef: Return the beef to the skillet. Stir in the 1 tsp onion powder, 1 tsp garlic powder, and salt & pepper to taste. Cook for 1-2 minutes more, stirring to ensure the seasonings are well distributed and fragrant. Remove from heat and let cool slightly.
-
Assemble the Bombs:
- Flatten each biscuit dough piece into a circle, about 3-4 inches in diameter (use your hands or a rolling pin).
- Place a spoonful of the seasoned ground beef mixture in the center of each flattened biscuit round.
- Top the beef with a generous pinch of shredded cheddar cheese.
- Carefully bring the edges of the biscuit dough up and over the filling, pinching and sealing them tightly at the top to form a ball. Ensure the beef and cheese are completely enclosed. If the dough rips, gently pinch it back together.
-
Bake the Bombs:
- Place the assembled Melted Cheddar Mini Big Mac Bombs, seam-side down, on the prepared baking sheet, leaving some space between each.
- In a small bowl, combine the 2 tbsp melted butter and ¼ cup grated Parmesan cheese. Brush the tops of each bomb generously with this mixture.
- Bake for 12-18 minutes, or until the biscuit dough is golden brown and cooked through, and the cheese inside is melty. Baking time will vary based on the size of your bombs and oven.
-
Garnish & Serve:
- Remove the bombs from the oven. Garnish with fresh chopped parsley (if using).
- Serve warm, ideally with a side of homemade “Big Mac Sauce” (mix all optional sauce ingredients together) for dipping!
Tips & Variations:
- Cheese Choice: While cheddar is classic, feel free to use other good melting cheeses like Colby Jack, Monterey Jack, or even a blend of shredded cheeses.
- Add Pickles/Onions: For an even more authentic Big Mac flavor, you can finely dice a few pickles or some fresh onion and mix a small amount into the beef filling, or offer them as a side for dipping.
- Sauce Inside: For a true Big Mac bomb, you could try putting a tiny dollop of the “Big Mac Sauce” directly inside the bomb with the beef and cheese before sealing, though this might make them harder to seal and prone to leaking. Dipping is often easier!
- Make Ahead: The seasoned ground beef can be prepared a day in advance and stored in the refrigerator. Assemble the bombs just before baking.
- Storage: Store any leftover bombs in an airtight container in the refrigerator for up to 3 days. Reheat gently in a microwave or oven until warmed through.
