Melt In Your Mouth Caesar Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 cup Caesar salad dressing (store-bought or homemade)
1 cup grated Parmesan cheese
1/2 cup crushed buttery crackers (like Ritz)
1/2 cup breadcrumbs (preferably panko)
1/2 teaspoon garlic powder
1/2 teaspoon dried Italian seasoning
1/4 teaspoon black pepper
Fresh parsley for garnish (optional)
Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare Chicken:
Place the chicken breasts between two pieces of plastic wrap or parchment paper. Gently pound them to an even thickness using a meat mallet or rolling pin.
Marinate Chicken:
Place the chicken breasts in a shallow dish or zip-top bag. Pour the Caesar dressing over the chicken, ensuring each piece is well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Prepare Coating:
In a medium bowl, mix together the grated Parmesan cheese, crushed crackers, breadcrumbs, garlic powder, Italian seasoning, and black pepper.
Coat Chicken:
Remove the chicken from the marinade, letting any excess dressing drip off. Dredge each piece in the Parmesan mixture, pressing gently to ensure the coating sticks well.
Bake Chicken:
Arrange the coated chicken breasts in a single layer on a baking sheet or in a baking dish. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden and crispy. The internal temperature of the chicken should reach 165°F (74°C).
Serve:
Remove from the oven and let the chicken rest for a few minutes before serving. Garnish with fresh parsley if desired.
