🛒 Ingredients:
3 cups all-purpose flour
1 ½ tablespoons baking powder
1 teaspoon baking soda
1 ½ to 2 tablespoons sugar (adjust to taste)
1 ½ teaspoons salt
¾ cup (1 ½ sticks / 180g) unsalted butter, chilled and cubed
1 ¼ cups (300 mL) buttermilk, chilled

Preheat Oven:
Set your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Mix Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
Cut in the Butter:
Add the chilled, cubed butter into the flour mixture. Use a pastry cutter or your fingertips to work it in until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
Add Buttermilk:
Pour in the cold buttermilk and gently mix just until the dough comes together. Don’t overmix—this keeps the biscuits tender.
Shape the Dough:
Turn the dough out onto a floured surface. Gently pat it into a 1-inch thick rectangle. Fold it over once or twice for extra layers, then pat it out again.
Cut the Biscuits:
Use a biscuit cutter or glass to cut out circles, pressing straight down (no twisting!). Re-roll scraps as needed.
Bake:
Place the biscuits on the baking sheet, close together for softer sides or spaced out for crispier edges. Bake for 15–18 minutes, or until golden brown.
Butter & Serve:
Brush tops with melted butter (optional) and serve warm!
