Mediterranean Savory Muffins Recipe
Ingredients:
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp dried oregano
1 tsp dried basil
1/2 cup sun-dried tomatoes, chopped
1/2 cup pitted Kalamata olives, chopped
1/2 cup feta cheese, crumbled
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh spinach
2 large eggs
1 cup milk
1/4 cup olive oil
1/4 cup plain Greek yogurt
1 clove garlic, minced
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
Prepare Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, baking soda, salt, dried oregano, and dried basil.
Add Fillings:
Stir in the sun-dried tomatoes, Kalamata olives, feta cheese, Parmesan cheese, and chopped spinach until evenly distributed.
Prepare Wet Ingredients:
In another bowl, whisk together the eggs, milk, olive oil, Greek yogurt, and minced garlic until well combined.
Combine Mixtures:
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
Fill Muffin Cups:
Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
Bake:
