Ingredients
For the Patties:
2 cans (6 oz each) salmon, drained and flaked π
1 cup fresh spinach, finely chopped (or Β½ cup thawed, drained frozen spinach) πΏ
ΒΌ cup red onion, finely chopped π§
2 cloves garlic, minced π§
β cup feta cheese, crumbled π§
1 egg, beaten π₯
1 tablespoon fresh parsley, chopped (optional) π±
1/4 cup breadcrumbs (preferably whole wheat) π
1 teaspoon dried oregano π
Salt and black pepper, to taste π§

Instructions
Prepare the Salmon Mixture:
In a large bowl, combine the drained and flaked salmon, chopped spinach, red onion, garlic, feta cheese, beaten egg, breadcrumbs, parsley, oregano, salt, and pepper. Mix well until all ingredients are fully incorporated.
Form the Patties:
Using your hands, divide the mixture into small portions and shape them into patties. Depending on the size, you should get around 8 patties.
Cook the Patties:
Heat olive oil in a large skillet over medium heat. Once hot, add the patties to the skillet and cook for 3-4 minutes on each side, or until they are golden brown and crispy.
Serve:
Once the patties are cooked, transfer them to a plate lined with paper towels to absorb any excess oil. Serve warm with a side of tzatziki sauce, a fresh salad, or your favorite dipping sauce.
