A vibrant and hearty one-pan dish with seasoned ground beef, crisp veggies, and bold Mediterranean flavors. Perfect for busy weeknights or meal prep!

🛒 Ingredients:
1 pound ground beef

2 tablespoons olive oil

1 medium onion, chopped

3 garlic cloves, minced

1 red bell pepper, thinly sliced

1 zucchini, thinly sliced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1/2 teaspoon dried thyme

Salt & pepper, to taste

Optional: 1/2 teaspoon crushed red pepper flakes (for heat)

Optional: 1/4 cup chopped fresh parsley or basil

Optional: Crumbled feta cheese, for topping

Optional: Lemon wedges for serving

👨‍🍳 Instructions:
Brown the Beef
In a large skillet over medium heat, cook the ground beef until browned and cooked through. Season with salt and pepper. Drain excess fat if needed and set aside.

Sauté Aromatics
In the same skillet, heat olive oil. Add the chopped onion and cook until translucent (about 3 minutes). Stir in the garlic and cook another 30 seconds.

Cook the Veggies
Add the bell pepper and zucchini. Sauté for 5–6 minutes until tender but still vibrant. Add the cherry tomatoes and cook another 2–3 minutes, just until they begin to soften.

Combine & Season
Return the cooked beef to the skillet. Stir in oregano, thyme, red pepper flakes (if using), and adjust seasoning to taste. Mix until everything is well combined and heated through.

Serve It Up
Garnish with fresh herbs and crumbled feta if desired. Serve with rice, couscous, quinoa, or warm pita bread. Add a squeeze of lemon for brightness!

Make it low-carb by serving over cauliflower rice.
