Ingredients:
2 large apples (such as Granny Smith or Honeycrisp), cored and cut into matchsticks
3 stalks celery, cut into matchsticks
1/4 cup red onion, thinly sliced (optional)
1/4 cup chopped walnuts or pecans (optional)
1/4 cup dried cranberries or raisins (optional)
For the Dressing:
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 tablespoon honey or maple syrup
1 teaspoon Dijon mustard
Salt and pepper, to taste

Instructions:
1. Prepare the Vegetables and Fruits:
In a large bowl, combine the matchstick-cut apples, celery, and red onion (if using). Add the chopped walnuts or pecans and dried cranberries or raisins if you’re using them.
2. Make the Dressing:
In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and pepper until well combined.
3. Toss the Salad:
