Mashed Potato Cheese Puffs

Ingredients:

2 cups mashed potatoes (cooled)
1 cup shredded cheddar cheese
2 eggs
¼ cup grated Parmesan cheese
¼ cup chopped green onions
¼ teaspoon garlic powder
Salt and pepper, to taste
½ cup breadcrumbs (optional, for topping)
Butter or cooking spray (for greasing muffin tin)

Instructions:

1. Preheat oven to 400°F (200°C) and lightly grease a mini muffin tin with butter or cooking spray.
2. In a large bowl, mix mashed potatoes, cheddar cheese, eggs, Parmesan, green onions, garlic powder, salt, and pepper until well combined.
3. Spoon the mixture into the muffin tin, filling each cup to the top.
4. Sprinkle breadcrumbs on top for extra crunch, if desired.
5. Bake for 20–25 minutes, or until the tops are golden and the puffs are set.
6. Cool for a few minutes, then gently remove from the tin.
7. Serve warm as a snack, appetizer, or side dish.
