Marshmallow Caramel Popcorn Recipe
Ingredients:
10 cups popped popcorn (about 1/2 cup unpopped kernels)
1/2 cup unsalted butter
1 cup light brown sugar, packed
1/4 cup light corn syrup
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 (10 oz) bag mini marshmallows
Instructions:
Step 1: Pop the Popcorn
Pop the Popcorn: Pop about 10 cups of popcorn using your preferred method (stovetop, air-popped, or microwave). Make sure to remove any unpopped kernels.
Set Aside: Place the popped popcorn in a large bowl, ensuring it’s big enough to stir in the caramel and marshmallows.
Step 2: Make the Caramel Sauce
Melt the Butter: In a medium saucepan over medium heat, melt the butter.
Add Brown Sugar, Corn Syrup, and Salt: Stir in the brown sugar, corn syrup, and salt. Cook, stirring frequently, until the mixture begins to bubble. Let it simmer for 3-4 minutes, stirring constantly to prevent burning.
Add Vanilla and Marshmallows: Remove from heat and stir in the vanilla extract and the mini marshmallows. Stir until the marshmallows are completely melted and the sauce is smooth and creamy.
Step 3: Coat the Popcorn
Pour Over Popcorn: Immediately pour the marshmallow caramel sauce over the popcorn.
Mix Well: Gently stir the popcorn to coat it evenly with the sauce. Be careful not to crush the popcorn while stirring.
Optional Add-Ins: If you want to add extra toppings like nuts, chocolate chips, or M&M’s, sprinkle them over the popcorn while it’s still sticky.
Step 4: Let It Set
Spread the Popcorn: Spread the coated popcorn on a large, parchment-lined baking sheet in an even layer to cool and set.
Serve: Once the popcorn has cooled and the caramel has set slightly (about 15-20 minutes), break it into pieces and serve.
