Marry Me Chicken Pasta
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
2 tablespoons olive oil
For the Sauce:
4 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional, for a bit of heat)
1 cup chicken broth
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
1/2 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Salt and pepper to taste
For the Pasta:
12 ounces fettuccine or your favorite pasta
Water for boiling
1 tablespoon salt (for pasta water)
For Garnish:
Fresh basil leaves, chopped
Additional Parmesan cheese
Directions:
Prepare the Pasta:
Bring a large pot of water to a boil. Add 1 tablespoon of salt to the boiling water.
Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
Cook the Chicken:
Season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set aside.
Make the Sauce:
In the same skillet, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant.
Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
Stir in the heavy cream, sun-dried tomatoes, and Parmesan cheese. Simmer the sauce for 3-4 minutes until it thickens slightly.
Add the chopped fresh basil, and season with salt and pepper to taste.
Combine Chicken and Pasta:
Slice the cooked chicken breasts and return them to the skillet, coating them in the sauce.
Add the cooked pasta to the skillet, tossing it in the sauce to combine. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
Serve:
Garnish with additional chopped basil and a sprinkle of Parmesan cheese.
