Marry Me Chicken Pasta

Marry Me Chicken Pasta

Ingredients:
2 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon red pepper flakes (optional, for heat)
1 cup chicken broth
1 cup heavy cream
½ cup sun-dried tomatoes (drained, if packed in oil)
½ cup grated Parmesan cheese
1 tablespoon Italian seasoning
8 oz pasta (like fettuccine, penne, or linguine)
Fresh basil, for garnish

Directions:
Prepare the Chicken:
Season the chicken breasts with salt and pepper on both sides.
Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for 5-7 minutes on each side, until golden and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set aside.
Cook the Pasta:
While the chicken is cooking, bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Drain and set aside.
Make the Sauce:
In the same skillet, add the minced garlic and red pepper flakes. Cook for 1-2 minutes until fragrant.
Pour in the chicken broth, stirring to deglaze the pan and scrape up any brown bits from the bottom.
Stir in the heavy cream, sun-dried tomatoes, Italian seasoning, and Parmesan cheese. Simmer the sauce for about 3-4 minutes, until it thickens slightly.
Combine Everything:
Slice the cooked chicken breasts into strips and return them to the skillet.
Toss the cooked pasta into the sauce, coating it thoroughly. Let everything simmer together for another 2 minutes, allowing the flavors to meld.
Serve:
Garnish with freshly chopped basil and a sprinkle of Parmesan cheese.
Serve hot and enjoy the creamy, flavorful pasta that will definitely earn you rave reviews!
